Matcha Chocolate Bites

We recently attended the Bude Food Festival spreading the word about MAWish Food.

Not only did we bring our functional blends but also decided to incorporate our liquid energy and liquid balance, into a recipe to demonstrate the versatility of our products.

We had a little experiment by making these vibrant green no bake matcha chocolate bites, some included the caramel peanut layer and some did not.

Let me tell you they went down a storm as we completely sold out and had you all asking for the recipe!

So here you are!

Ingredients

Base Layer

  • 50g gluten free oats
  • 4 tbsp almond flour
  • 20g cocoa powder
  • Approximately 100ml almond milk

Matcha Layer

  • 2 tsp liquid energy
  • 50g gluten free oats
  • 2 tbsp almond flour
  • 100g desiccated coconut 
  • Approximately 100ml almond milk

Caramel Peanut Layer (optional)

  • 100g peanut butter (crunchy)
  • 10 medjool dates (pitted, soaked and chopped)
  • 1 tbsp almond flour 
  • Approximately 100ml oat milk
  • 1 tsp liquid balance 

Chocolate Topping

  • 30g 70% dark chocolate (chopped)
  • ⅛ tsp coconut oil (optional)

Method

Base Layer

  1. Line a loaf tin with parchment paper; leave an overhang to lift out later.
  2. In a food processor or manually, combine all base ingredients together.
  3. Transfer to the tin and press until all smooth.

Matcha Layer

  1. In a food processor or manually, combine all matcha layer ingredients and blitz!
  2. Transfer to the tin and spread it evenly on top of the base layer.

Caramel Peanut Layer (optional)

  1. Soak dates in warm water until soft. 
  2. In a blender, add soaked medjool dates, along with their water and all ingredients except the nut butter - blitz until the mixture is smooth and thick.
  3. Now add the peanut butter and ensure all ingredients are combined.
  4. Spread on top of the matcha layer and place the tin in the fridge/freezer to set whilst making the chocolate topping.

Chocolate Topping

  1. Place chopped chocolate and optional coconut oil in a large bowl and microwave for about 45-60 seconds, stirring halfway, until completely melted.
  2. Remove the loaf tin out of the fridge/freezer. Now pour the melted chocolate over the bars ensuring all areas are covered.
  3. Place in the freezer for about 10 minutes to harden.
  4. Place on a chopping board and using a (warmed) sharp knife, slice into 12 sections.
